Roman Burtsev, the leading chef of the East-West taste laboratory, has performed a series of information seminars for the chefs, restaurant keepers and procurement specialists for the major restaurants of Ekaterinburg.
Since 2008, a representative office of the East-West has been functioning in Ekaterinburg, its major task being the facilitation of the regional restaurant industry development, technological assistance to distributors, and consulting. The Roman Burtsev’s seminars have been held within the framework of this strategy. In five days (Since July 28 to August 1) they were visited by some 20 enterprises, including restaurants: Richmond, Conquista, Courchevel, Tinkoff, La Ronde, Sumo; SEEZON, Maison, Antey, Foodland, KEF, Datcha, pubs: James, Joe Pub, and cafes: Sky, Viennese, Riccona.
became the main subject of the seminars. Roman compared the peculiarities of marble beef production in Australia and the USA, the technologies of cattle feeding and breeding used in these countries. Roman paid special attention to the existing classification of meat, its categories and their correspondence at various continents. Each seminar was finished by a tasting of marble beef samples produced in Australia and the USA.
In addition to the work performed immediately at the restaurants, training presentations were planned and held for the selling personnel of the companies, operators of the food market of Ekaterinburg.
