Maseter-class of Kijoshi Khajiamizu will take place on December, 3, at the Laboratory of taste


On the 3-rd of December, Monday, at the Laboratory of taste of the East-West company there will take place a masterclass of the Grand-chief of the restaurant chain «Daitokai» (Gemany) and an independent consultant of Japanese cuisine Mr. Kijoshi Khajiamizu. The masterclass, jointly organized by the companies East-West, Mistral and Kikkoman, will be devoted to the Japanese cuisine, and application of Japanese techniques in European dishes preparation.

In the program of the masterclass:

Part1: Japanese menu is not only sushi
  • Sashimi;
  • Kenchin-dziry (Japanese vegetable soup);
  • Teriyaki salmon under daikon dressing;
  • Ginger pork under Japanese dressing.
Part 2: European cuisine with a Japanese accent
  • Smoked salmon with sweet basil sauce;
  • Mushroom soup;
  • Shrimps in tomato sauce;
  • Veal with pepper sauce.
The laboratory of taste of the East-West company is a non-profit educational project of the East-West company, which performs two functions — research and educational. An official opening ceremony of the Laboratory of taste, located in the territory of the industrial warehouse complex near Zelenograd, took place in April, 2006. Many well-known restaurateurs and hoteliers, including Igor Bukharov (the Federation of Restaurateurs and Hoteliers of Russia), Roman Roghnikovsky (Nostalghi and Grabli restaurants), Alexander Orlov (LightLife holding), Stepan Mikhalkov (Vertinsky, Vanil, Casual restaurants) et al., entered into the Board of Trustees of the laboratory of taste of the East-West company. Kijoshi Khajiamizu was born in Tokyo in 1961. In 1978 he began working in Benikhan, Tokyo. In 1980 — he has got a chief- cook degree in Tokyo. In 1982 he worked in «Daitokai» restaurant, Germany. Since 1986 has worked as the Grand-chief of the restaurant chain «Daitokai», Germany. In 1994 has published a cookbook Kuche der Welt-JAPAN». In 1999 worked as an invited Chief-cook of the Japanese cuisine during G7 Summit in Köln (at request of the Japanese Embassy). Since 200 has been an independent consultant on Japanese cuisine.

The beginning of the mastercclass: 12:00. A free-of-charge bus for visitors of the Laboratory of taste will depart from the metro station «Rechnoy vokzal».
