Master class in Volga Federal District
On March 28 East-West Group of Companies together with Sweet Life Foodservice Company, the largest supplier of products for the HoReCa sector in Volga Federal District, held a master class for restaurateurs, chefs and pastry technologists of Nizhny Novgorod.
Master class consisted of two parts. The first was devoted to different types of cream, their technological features, their use in restaurant production. The chef of the Laboratory of Taste, Rodion Bronte, showed audience the master class of milk, vegetable and mixed fat-based cream of Irish company Pritchitts and after the demonstration cooked some unusual dishes for visitors. The cream soup of roasted pumpkin with celery and pumpkin oil, the bobby veal with sauce of Japanese mushrooms and sunflower sprouts, chocolate sauce with fruit sticks perfectly illustrated the unique versatility and taste of Pritchitts cream obtained from the Irish cow’s whole milk.
The second part of the master class was aimed at demonstrating the benefits obtained by the restaurant through the use of modern pastry ingredients. The technologist of the East West Laboratory of Taste, Maksim Savelyev, demonstrated to the audience a number of mixes and fillings that facilitate and speed of almost any stage of desserts cooking from making dough and choosing fillings to execution of the original decors. Maksim showed the audience the techniques of cooking pies and muffins with different fillings, baking a cake using biscuit mixes and fillings. In addition, Maksim has demonstrated the techniques for working with chocolate and chocolate glaze, hot and cold glazing gels, vegetable cream-based creams.
The guests of the master class were 70 professionals of HoReCa sector, the clients of Sweet Life Foodservice Company. They praised the work of the presenters, Rodion Bronte and Maksim Savelyev, who, in turn, tried to optimally respond to numerous questions of the audience.
