Jay McCarthy’s Master Class for Hotels and Chain Restaurants
East-West Group invites you to the master class of famous American Chef Jay McCarthy devoted to alternative cuts of the marbled beef.
Jay McCarthy worked for many well-known restaurants and hotels in USA. He has his own original style in cooking, where classic Texan motives are intertwined with tastes, flavors and spices of the tropic countries. Currently Jay is the Corporate Chef for the chain of restaurants Catskill Place, Colorado. He travels a lot around the globe teaching master classes and offering consulting services, hosts own cooking TV show.
During the Moscow master class Jay McCarthy will show processing technologies for alternative cuts of American marbled beef. He will not just show the dressing of the cuts mostly used at the USA hotels (shoulder, breast, chuck roll), but also will tell what meals from these cuts may be interesting for a hotel restaurant menu.
The master class will be held on 22 August from 11:00-15:00 at
the O2 Lounge restaurant of the Ritz-Carlton Hotel.
